Kids Bean Burgers

Burgers are a favourite for our house and this super quick version made with kidney beans, has been a regular feature on our table throughout the past year. A tin of kidney beans is such an inexpensive kitchen cupboard standby and this recipe will transform beans into a fun and delicious meal. Warm bean burgers on the table in around 20 minutes, from start to finish.

To make the burgers I mash the kidney beans with a fork/ or potato masher, as you want the beans to still have some texture. Quite quickly you will see the beans break-down and come together to form a good mix, for burger patties. Then it is just a case of adding a little parsley some mild spice, an egg and some breadcrumbs to bind. Easy and then end result is so good. Toppings and sauces are everything with a burger, so go with your favourites.

recipe makes 4 burgers

  • 400g tin of kidney beans, drained and rinsed in running water

  • 40g breadcrumbs, coarser texture breadcrumbs

  • 1 tablespoon parsley, finely chopped

  • 1 organic egg

  • 1/2 teaspoon mild chilli powder (optional)

  • freshly ground black pepper

  • a pinch of sea salt

  • oil, for cooking

n.b.if you are cooking for a bigger crowd just double the quantities and so forth

 

to serve

  • burger rolls of your choice

  • sauces of your choice, we love reduced sugar tomato ketchup and a dollop of vegan mayo

  • toppings of your choice, we love little gem lettuce leaves, sliced tomatoes and sweet pickle slices

 

Preheat the oven to 180C (fan oven).

Add the drained and rinsed kidney beans to a large bowl and mash with a potato masher (or fork) to break down the beans. You want there to be some texture, and for the mix not to be smooth. This will make the finished burgers eat so much better. Add the breadcrumbs, egg , parsley, mild chilli powder and season. Then combine with a spatula to bring the burger mix together. With clean hands shape the mix into 4 evenly sized burger patties. And set aside on a plate, ready for cooking.

Take a large frying pan and bring to a medium heat, add 1-2 tablespoons of oil for cooking. Place the bean burgers in a pan and brown lightly for 2 minutes a side, to give the burgers a lovely colour and a good crust. Remove to a lined baking sheet and place in the preheated oven for 15 minutes to cook through. Remove from the oven, drain on kitchen paper.

Serve the bean burgers with burger rolls, toppings and sauces all of your choice and enjoy!
