Teatime Honey Biscuits

Teatime biscuits and a cup of tea, are what makes my world go round. You can keep the kids busy too, with this lovely baking recipe. The biscuit dough is sweetened with honey*, rather than sugar; but in the recommended quantities it is not overly sweet.

Once you have made and chilled the dough, roll it out and use cutters ,to make any shapes you like. The biscuits will keep for a few days in an airtight container.

*honey is not suitable for children less than 1 years old

 

ingredients

  • 160g plain flour (I use 1/2 plain white flour and 1/2 plain wholemeal flour)

  • ½ teaspoon baking powder

  • ½ teaspoon ground cinnamon

  • 2 tablespoons honey

  • 2 tablespoons milk

  • 60g butter, softened to room temperature

 

making the biscuits

Preheat the fan oven to 180°C.

Place all the ingredients in a bowl and mix together by hand to form a dough. The butter needs to be softened to room temperature (to make a nice smooth dough that comes together easily). Wrap the dough in a large sheet of baking paper and chill in the fridge for 30 mins, to allow the dough to firm up.

Next line two trays with baking paper, ready for cooking. Roll out the dough to ½ cm thickness, I find it easiest to roll out the dough sandwiched between two sheets of baking paper. Cut out shapes, using cookie cutters and place the biscuits on the pre-lined baking trays.

Bake in the oven for 8-10 minutes, this will depend on the size of the cookies. For smaller cookies check them after 6 minutes or so. Remove from the oven and cool on a wire baking rack.
