Dippy Eggs

This isn’t a recipe it is just our favourite way of eating eggs in the Spring time. In the UK the window for seasonal asparagus is: March until June, with April being the prime month and high season for asparagus. By the end of May, asparagus is at the end of its season in most locations. Asparagus is a great source of nutrients, including fibre, folate and vitamins A, C and K. Try lightly steamed asparagus soldiers, as a side to boiled eggs. My children love dunking the spears in egg yolk and it has been a great way to encourage them to try a few spears of one of my favourite Spring vegetables.

  • Serve soft boiled eggs, the best quality you can buy

  • Buttered toast sticks, on the side

  • Lightly steamed asparagus, on the side

  • A top tip is to add a knob of butter to the warm egg, it makes an instant hollandaise sauce
