Puffed Chocolate Rice Cups

These were so quick to make and lots of fun too, with my little girl as "sous chef". I say this loosely as she largely munched on chocolate and made a mess. But that is just what cooking with kids is all about. As a child we made some pretty unhealthy puffed rice cakes, adding lots of sugars. I have tried here to make a healthier version using dark chocolate and coconut oil. I still want my little girl to have all the memories I have of making these, just without the refined sugars. 

 

25g dark chocolate, I am using Green and Blacks (which contains dairy)
1 tablespoon coconut oil, I am using Lucy Bee
25g puffed brown rice, I am using Rude Health

 

Melt the chocolate in a bowl, over a pot of boiling water, gently (make sure the bowl doesn’t touch the water). Add the coconut oil. Take a big bowl measure out the cereal you are using and then add the melted chocolate/ coconut mix. Spoon into cases, I used a mini muffin tin and made 12 little bites. Pop in the fridge to set for for 2-3 hours. We ate these with some fresh berries. 
 

 

Chocolate Need to Know ~
🔺Chocolate contains caffeine
🔺So ideally no chocolate under 2 years (in its bought form), but no sooner than 12 months
🔺Can be used in cooking or home-made desserts
