Puffed Brown Rice and Dark Chocolate Cups

We are all so excited about the long weekend: even if the weather forecast isn't looking great.... Lots of family time, muddy walks and good food. On Easter Sunday I like to make a traditional roast dinner, with lots of vegetables, which we can all enjoy together. 

On @mimis.bowl I'll be sharing some fun new recipes and ideas too including: Puffed Brown Rice and Dark Chocolate Cups. Made with just three ingredients these are easy and fun to make all together, if your little one wants to get involved in the kitchen. I'll also be baking Carrot & Thyme Biscuits, which are savoury and have a lovely bright orange colour (from the carrot juice which you add to bring the dough together). If you haven't tried our Spiced Apple and Carrot Muffins, they are a winner too, you can even give the muffins carrot ears for the Easter weekend! 

There are two new fish recipes: Fish in Paper, which I wrote for the brilliant My Baba http://www.mybaba.com/fish-in-paper/ ~ healthy and light, I love this family friendly recipe for Spring. I used this method of steaming fish and vegetables for my daughter when she was weaning and then blended her portion. I love that each individual parcel can be slightly tweaked for each family member too: a good one if you are catering to lots of different tastes! This week I am also sharing a childhood favourite of mine Tuna Patties: an inexpensive recipe which uses mostly kitchen cupboard ingredients. I love simple recipes like this one: they use up leftovers and everyday ingredients, and can also be prepped ahead #parentwin
