Wishing you all the happiest start to the new year! We have so many exciting plans for Mimi's Bowl and I am unbelievably excited to get going with all the new recipes, collaborations and plans we have already underway.
This week I am cooking a lovely new muffin recipe, inspired by the brilliant Babyccino Kids: Apple & Blueberry Muffins. If you, like me, are looking at a few more days before your nursery re-opens you might feel you are running out of ideas to keep little ones occupied. How about whipping up this recipe with willing toddlers, or kids? Getting little helpers involved in the kitchen is a brilliant way of getting them involved and talking about food and this recipe would be a perfect one to try. Once cooled store the muffins in an airtight container and you'll also have some supplies for the next few days, so everyone is a winner.
I am revisiting my Creamy Fish Pie, which I top with buttery sweet potato mash. I'll also be talking about sugar free snacks this week, as there has been so much noise in the press about this recently. It is wonderful to hear a national debate on this subject and I hope we can all make changes for the better.
