I'm back on a mission this week to post more recipes and ideas that work for the whole family. This idea is at the heart of the Mimis Bowl and the reason why I started our campaign #onefamilyonerecipe ~ I get so many lovely messages and emails about this campaign. It can be so hard to find time to sit down and eat together as a family. Even harder if you are trying to make different meals and recipes for everyone... I feel tired just thinking about it! There has to be an easier way and for modern parents trying to juggle busy lives it can seem like the impossible. I'm trying a new recipe my Oven Baked Risotto, which I have never made before, but I love the idea of cooking a risotto in the oven so you can go off and get on with other things.
It uses my homemade chicken stock too, which is full of nutritional benefit. Also on the menu is a Roasted Salmon Tray Bake which is so easy to throw together in the evening, or on the weekend when you might have more time.
Finally, there will also be some good snack ideas ~ I'm making a classic recipe I make again and again Egg Frittata Muffins with peas and parsley. Also a new trick which is Rice Cakes with Dried Fruit Sprinkles. By chopping up the dried fruit (I have used apricots in my version) you add a healthy hit of sweetness.
