I am making a seasonal Family Lunch, which we often have on the weekends. It would be a great option for a special family lunch over Easter. One of our favourite things to do on the weekend, is sit down together for a family lunch. It is something I did as a child with my family: and a tradition I want to continue with my daughter (we work the timings around her afternoon sleep).
I will be cooking Lemon and Thyme Roast Chicken; I don't use salt when I cook, instead the lemon and herbs flavour the chicken, this means we can all enjoy it. There will be lots of left overs too, which is not a bad thing during the holidays... On the side will be my Pea and Ricotta dip, with vegetable and toast sticks, boiled New Potatoes (a seasonal treat) and my Cucumber and Yoghurt Dressing/ Dip.
