It is pancake week, and although I missed the day itself, there is always time to eat pancakes in our home. My daughter isn’t quite old enough to enjoy making them with me, but she definitely enjoys eating pancakes. There are lots of fun and healthy twists on classic pancake recipes and I am always searching for new ideas.
This week we have tried two recipes: pancakes made with sweet potatoes (boiled, cooled and added to the batter), which were light and fluffy. We also enjoyed making a more classic crepe with homemade instant blueberry sauce.
