This week is all about seasonal food: as we leave November and enter December I will be posting our top seasonal fruit and vegetable picks for the month. Hopefully a few new ideas here for your shopping list and I'll be cooking with lots of these ingredients over the next few weeks if you are looking for inspiration. I believe seasonality and family eating should be aligned, as seasonal produce simply taste better. Our picks this month include: butternut squash, leek, kale, cabbage, brussel sprouts, parsnips, chestnuts, pomegranates, tangerines, apples, pears and pineapple. Take your pick!
What I'll be cooking: first up is Crispy Potato Cakes, I am adding some tinned sweetcorn but cooked peas, or some cooked cabbage would both work brilliantly. This recipe is great for using up leftover mashed potato and vegetables too: an easy, inexpensive meal, with no compromise on flavour. They are coated in polenta for some added crunch and I am serving them with a smashed avocado dip.
I am also making a Winter Cous Cous; you can bulk this out with roasted vegetables, shredded chicken, or flaked salmon for a main meal. Its packed with flavour and studded with seasonal pomegranate seeds. Cous cous really is a brilliant store cupboard standby, for time-short parents as its already cooked you are just rehydrating it with boiling water, or boiling stock, which takes minutes. I am roasting Carrots with Cumin Seeds, a lovely Winter side dish; this could also be blended into a soup. Finally, my new Chicken Meatballs Recipe is taking shape.
