Summer Cherry Compote

The easiest cherry compote: just two ingredients. It tastes amazing swirled through yogurt, poured on pancakes, or even ice cream. If you do swirl some through yogurt you can also freeze the mix and make delicious cherry yogurt ice lollies.

To de-stone the cherries invest in a stone pitter on amazon. I like the Oxo Pitter, which I have linked. It will make light work of removing the stones, without it I wouldn’t have the patience to attempt this recipe!

  • 450g cherries

  • 1 orange, juices

  • 2 tablespoons water (if needed)

  • Yogurt, to serve

Wash and de-stem the cherries, then remove the stones carefully. Add to a sauce pan, with the juice of 1 orange and simmer for 10 mins. You can add a couple of tablespoons of water if needed. Cool, you can then serve as is, or blitz into a smooth sauce. Serve ver natural yogurt.

Store any leftovers in an airtight container in your fridge, it should keep for 3-4 days.
