Carrot and Thyme Biscuits


These no-added sugar biscuits are made with carrot juice (a fun twist on the No Added Sugar Apple Biscuits). You can make these with your little ones too, if you are looking for #baking inspiration. I like that this recipe has very few ingredients and the carrot juice brings the biscuit dough together. They are quite plain to eat (for adult tastes) but a good recipe for some easy baking fun in the kitchen. 

  • 100g plain flour

  • 100g wholemeal flour

  • 1/2 teaspoon baking powder

  • 75g butter, cut into cubes

  • 75ml carrot juice

  • 1 teaspoon fresh thyme leaves

  • pinch of ground black pepper (optional)

  • 2 tablespoons finely grated Parmesan (optional)


Preheat the oven to 180 C (fan oven)


Line one large, or two smaller trays with baking paper (ready for the biscuits). Sift the floors and baking powder into a bowl. Add the butter and rub with your finger tips into breadcrumbs. Then add the carrot juice, thyme leaves and Parmesan (if using) and bring together with your hands to form a dough.

Tip out on a floured surface and knead a little to bring it together. Then roll it out quite thinly (3mm approx). Use cutters to cut into shapes and place on the lined baking trays. Bake for 15 minutes or until starting to colour. Leave for 5 mins to cool and transfer to a wire rack, they will store for a few days in an airtight container.
