Chilled Pea Soup To Go
These chilled pea soups, made with bone broth (or homemade chicken stock), are delicious little pots of goodness. You can of course substitute chicken stock for vegetable stock. They are great served in jam jars so you can enjoy them outdoors, or on a picnic.
For smaller children exclude toppings (below) and add a little less homemade stock to make a thicker warm pea purée.
- 1 tablespoon olive oil
- 1/2 onion
- 200g frozen peas
- 300ml homemade stock, or no salt stock cubes
- fresh mint
- fresh parsley
- crumbled feta
- cooked peas
Cook the onion for 5 mins until soft, then add frozen peas and stock. Cook for 8-10 mins and then blitz. Then chill, as this soup is delicious served cold.
To add flavour: serve with mint, parsley, crumbled feta and some cooked peas.
